This is my second James Peterson cook book. My first was Sauces. This book is even more full of general useful information than Sauces. (probably by intention) His explanation of many techniques are concise and well illustrated. The only thing I have found missing would be the "pronunciation" of most of the French terms. This book is a must have for those of us that want to establish a solid foundation to take our cooking to the next levels and beyond. I have ordered the "Baking" cookbook he has written and can't wait to see what's in it. With due diligence to the details, I can't help but think with these 3 books, I will stay very busy learning how to cook many delicious meals. Thank you again James.
I've been cooking for a long time and this book is simply one of the best introductions to the culinary arts, and it should be one of the first additions to any serious cook's culinary library. No matter how long you've been cooking or where you cook at (home, on the corner, a short order cook at a greasy spoon or even as a professional cook at a restaurant) this is pretty much the foundation of technique, and you'll be able to correctly prepare and cook meals very quickly if you invest a little time and reflection on the contents of this book. The book itself is packed with great illustrations and recipes, and it also shows you very clearly what works what as far as basic ingredients goes. For the basics this is a definite MUST HAVE!
James Peterson Does a very good job of covering the basics and more in this volume. The book is layed out in an easy to read and use fashion. It will be a welcome edition to any new cooks library and a nice refresher for the experienced cook. Would make a great gift to the aspiring young cook in your life.
A great book for people who love the art of the kitchen, no doubt about it. The book is great cause explains every process in a easy way and also contains pictures showing how to follow the process and most of the sauces. Essential for all the people who wants to take their kitchen skills to the next level.
I absolutely love this book. I wish I had had it when I first got married and didn't know how to do anything. I am a visual learner so the pictures of the step by step process are great for me. It is a very beautiful, very helpful book.
