This book is commonly billed as a must read. If you are trying to learn the science of breadmaking and have the attention span of graduate research assistant, then go for it you will probablylove it. I was using the book for a reference on brick oven, and it was somewhat helpful, but I could have gotten by without it thanks to the information on the net and youtube. The fornobravo free plans are much better and I found myself favoring their techniques at each step. I found the organization of the book to be poor, and it is in desperate need of editing, i.e. shortening. I found many of the way too deep explanations did not connect the dots to practicality. The writing is reminiscant of college professor. I would have appreciated the cliff notes for this one. Looking back in the book for specific references during the building process was extremely tedious. Although the short little vignettes are interesting, it is not germain to the building process. They should have been stored in their own chapter. I could revise and reorgnaize this book and make it a truly good reference after building the oven, but why should I have to do that?Read full review
I have always wanted an outdoor wood fired pizza / Bread oven just like the ones I have seen in Italy and France. This book has all the information we needed to build one. I must add these ovens are not a weekend project. We are in the 4th week of building and Michael my husband has been doing great Job. He is an Ironworker by trade and brick laying is a whole new world. He is right now making the 2nd course of the dome. But I noticed my time to write this review was almost over so I just wanted to say this is a great book if you are planning to build one. I have already started a sour dough starter but it might be about 18 days before I can make my first wood fired homemade loaf and I can not wait. This is a great book and the seller I got this from got it to me in 24 hrs. I am happy and looking forward to many loaves.Read full review
This was a great book that detailed exactly what my builder husband needed to construct an actual bread/pizza oven for our backyard. Our Architect needed this book more than we did to understand the proper placement of reinforcement rebar, clearance, and sizes for our structure. We researched the topic extensively prior to having our plans drawn, and ths was by far the most descriptive book on bread ovens available. It includes various pictures, that help the visual types (like me), and enough information for our Architect to draw a cohesive drawing that would be accepted by our extremely particular municipality for permitting. This book was a greathelp with our project!
