Anything produced by America's Test Kitchen is worth having, I think. This book is comprehensive, and explains the science of baking. No guess work! Do things the way they say and you'll be successful every time. One criticism is the spiral bound (like a loose leaf binder) book. Requires careful handling to not tear the pages. I'm already shopping for reinforcements. Does anyone remember those round white circle things to repair loose leaf pages? This book should come with a box of those.

The America's Test Kitchen cookbook series is a favorite at our house. The recipes are so well written and explained that even a novice baker can produce yummy baked goods. Every baker, no ice or experienced should have this cookbook in their library.

I have not had time to make any of the recipes in this book yet, but I have skimmed through the entire book and am very excited about the many "tips"--explanations such as why one ingredient or type of pan works better than another. They have already done tests and comparisons and explain the more satisfactory results. I am looking forward to putting into practice those tips as I bake up a storm in the near future.
