Great recipes, easy to follow. Too many GF recipes just say "sub any GF all purpose flour for regualr flour!" which almost never works. You need to use GF flours differently and really know what you're doing to achieve a good result. It's really nice to see a book from someone who does GF baking professionally and really knows what they're talking about.

This is a very good book with a lot of varied recipes. One thing that threw me is that it doesn't give much time for the bread to rise, it depends on oven spring. I've experimented and found that method works better for these breads over a long rise. I was so impressed so much with this book that I bought a 2nd copy for a friend who needs to avoid gluten, dairy and eggs. Most gluten free bread depends on eggs. Another friend saw it and fell in love. This is a great book whether you are vegan, trying to avoid allergens or just want to make unique bread.
I had to go completely off gluten because of a diagnosis of SIBO and food allergies and I was struggling trying to find food I could eat and stumbled across her cookbooks at the local library. I am now making bread for the first time in my life and have been introduced to a whole new world of flours and egg substitutes I've never heard of. So grateful for her books!
