This is an excellent book for anyone who cooks. It truly does have “1001 things every good cook needs to know.” Ever wonder why something you cook just doesn’t taste like it does in a restaurant? Do you avoid recipes because you aren’t sure how to substitute? Can you bake something instead of pan-frying it? What is the best way to thaw foods? How do I know when something is fresh or past its prime? There are so many cuts of meat, which one is best for the recipe? What kitchen tools do I absolutely need? How much pasta or potatoes should I use? What’s the difference between all the different kinds of onions (mushrooms, leavening, sugars, salts, oils…etc.)? It’s impossible here to describe all the categories of information in this book but I can say this: How to Peel a Peach is very well organized and easy to read. It’s perfect for the newest cook but it is also excellent for the “seasoned” cook! It can improve the recipes you already use and it will encourage you to try new foods and recipes because you will feel more confident. I have benefitted much from having this book at hand, to just look up things I want to know. I like it's organization. It is most often right beside my recliner and I browse through it. The book goes into what varieties of vegetables can be substituted, when the one you want is out of season. I have actually found no other book quite like it. Ms. Myers gives many tips on knives, pans, the shelf life of spices, food preparation appliances, probably everything you ever want to know about fruit...AND there are many recipes. I highly recommend this book! It's almost a one volume library on the kitchen.
