High carbon steel so don't buy it if you going complain about rust, and "taking care of the blade is to hard for you". Stays very sharp for very long because of the material it is made out of. Sturdy handle and straight blade is all I wanted. I would buy again no question.

I needed a kitchen knife that could handle carving/cutting varieties of meat, vegetables and general cutting tasks in the kitchen. This Ontario Old Hickory 7" knife has fit the bill perfectly. It is comfortable in the hand and has even weight to cut fresh meat effortlessly. It is very sharp right out of the box and hopefully will remain very sharp for years to come without having to do much maintaining the edge. I work at one of the busiest, most popular BBQ places in north Texas and I cut a lot of sausages, brisket, chicken halves and more. My colleagues all paid more than 25-30 dollars for their stainless steel "10 butcher knives from Dexter and those won't hold an edge to save their lives. This knife is heavy, with a thick blade of 1095 carbon steel-the same alloy my ka-bar tactical knife is made of. It's got a thick wooden handle with two brass rivets and a textured blade. I'd post photos but I'm actually not writing something on the Internet from my home computer so I don't have any. The point is, I'm going to go into work tomorrow with a blade I'm confident in owning for a much longer time than the plastic/stainless steel throwaways that cost far more that I'm used to. This is a big full-tang knife well suited for camp or kitchen. The fit and finish of the 'Old Hickory' branded hardwood handle with brass rivets was very good for a knife in this price range. The forge marked carbon steel blade was straight and sharp, and it has the Ontario logo roll stamped on the side. Perfect for slicing large cuts of meat, watermelon or, if you're like me, flipping burgers or rolling sausages on the grill. Made in the USA.

I received the Old Hickory Butcher Knife, " 7-10" " blade, and was amazed at the balance and the quality! Easy to sharpen knife, however when I received it, the knife was already as sharp as a razor! I merely stropped the blade a few times and WOW! This Old Hickory 7-10 is the best kitchen knife that you can buy anywhere! With little care this knife will last longer than a lifetime. I applied several coats of mineral oil to the handle to prevent it from drying and cracking. This knife would make a perfect inexpensive gift that would certainly be much appreciated!
