Prior to getting these pans, I was using parchment paper, and raised the dough on a tray. Then I would transfer the dough and parchment to baking stones in my oven. I eliminated all of that with this pan. I simply formed the dough into loaves and put them on the pan to raise, and then put it in the oven. The metal is sturdy, and non stick. I didn't have to use my baking stone to achieve beautiful crustiness. I did flip the loaves over for the last 5 minutes of baking to make it all extra crispy. They did not stick at all, so handling them after they were freshly baked was not a problem. I definitely recommend these if you are making French bread with any regularity.

Material is rather thin but supported by a cookie sheet I feel that it will perform well. Haven't had an opportunity to use it yet but don't think there will be any issues. Seeing that the entire pan is well perforated should give excellent heat exposure to the baking loaf.
