If anyone has had the misfortune of buying a "Japanese" knife from a German or American manufacturer (as I have) the price you pay for one of these, far superior, real Japanese knives will probably hurt. I know I could've bought 3 of these for the price of one knock off made by Wusthof and the quality of the steel, the bevel, the ease of sharpening and the retention of that sharp edge is astonishing after years of hard German and American stainless. The Japanese stainless contains a higher percentage if carbon steel which accounts for the sharpening and edge retention. I've carried a Case pocket knife since my ages in the single digits (a long time) and I've always bought their carbon blades for the same reason. Don't let the shipping info, 3 week shipping, of tarries and taxes scare you ... This is a beautiful addition to my cooking tool collection. Super sharp right out of the box. Haven used it a lot yet but is holding edge well. This knife is also well balanced and fits my hand perfectly. $50.00 is not much to pay for this quality. Delivery from Japan came quicker than my domestic orders!

Love the softer steel of Japanese knives. They require a bit more maintenance than German steel, but reward you with the ability to bring up a fresh Edge with ease. Love the back weighted handle that dispatches veggies in seconds flat. Perfect manual food processing tool!
