Recently diagnosed with Celiac Disease and having to transition to a strict Gluten Free diet has been a very BIG challenge. Discouraging at times. Now that I've received the book it helps take all the guess work out of preparing meals that will not only keep me gluten free, but also allow me to have a quick reference to multiple meal choices. Truly Simple Food Solutions for Everyday Meals as the cover indicates. What I like about this book is that it's not just a recipe book. It offers a wealth of information for those of us in a growing population requiring GF diets for our health and just learning all the obstacles that come with it. One section discusses stocking the GF kitchen which is a simple guide that anyone newly diagnosed can follow with the GF Pantry & Shopping List. It provides a guide that demonstrates how to decode food labels and also a nutritional analysis for each recipe allowing you to get the amounts of Calories, Protein, Fats, Carbs, Fiber, Cholesterol, Iron, Sodium & Calcium. This is highly VALUABLE to me for many reasons!!!!! Beautiful color photos are found throughout the book, which are helpful on how to present the meals in an appealing way. (Very important to me.) Cooking tips are provided throughout the book for individual recipes. A simple to read "What to eat (and not eat) section helps take so much of the guess work out of what you really can (and can't) eat! The book describes many tips to manage a Safe kitchen when sharing with other family members that eat gluten containing foods. Simple solutions to help keep the family sane! Since I am the cook in the family these tips really help me understand how I can manage my kitchen with 2 teenagers that consume Gluten. I now feel confident that I can continue to entertain at my home and know that I can offer a Gluten Free spread from appetizers to desserts that are safe for everyone to enjoy and still meet my goals at preparing lighter food choices. I have purchased 4 Gluten Free cook books in the past 4 months, but this is going to be my Go-To book for everything now. Easy recipes. Gourmet quality options to keep things interesting, most importantly I can use this book to cook the same 1 meal for my entire family and no longer preparing 2-3 varieties of foods to cater to everyone's dietary needs - and palate preferences!!!!! Pizza, Pasta, Bruschetta, Crab Cake Quiche, Pancakes, Chicken Fried Steak, Sandwiches & Wraps, Soups, Stews, Brownies, Cakes, and my favorite Rice Pudding! This book is truly an answer to my prayers!
